Welcome to my blog

If you’re reading this, you probably already know me and I sent you the link to my new food blog. But, on the off chance that you don’t, let me introduce myself. I’m Felix. The fact that you’re on my blog right now means that we share a beautiful trait in common – we both love food. Or, you’re just hungry and looking for something to cook for dinner, don’t worry, we share that in common as well.

As a bit of preface to my blog, I’m both a type 1 diabetic and a vegetarian. Recipes on this blog will focus on robust meals that will keep you full while also being good for you and diabetes management (don’t worry if you’re not a diabetic, these recipes are still good for you too). You’ll find that recipes on my blog are full of whole grains, vegetables, plant based protein and most importantly… cheese. No, just kidding, I wish every recipe was full of cheese, however that would not be very sustainable. Which brings me to my next point, I am a vegetarian for the environment. I find meat to be delicious, however, I could not live with a clear conscience and eat meat everyday. I invite you to come with me on a journey and realize that vegetarian cooking can be just as satisfying and most importantly, delicious as meat-based diets.

I am obsessed with perfecting all the food I cook through trial and error (emphasis on the error). Mistakes in the kitchen are unavoidable and frustrating but also make you a better cook. Every time something doesn’t come out quite how I wanted I make a mental note and improve on it next time. If you make a recipe I posted and think you can improve it somehow, please leave me a comment as I would love to hear your thoughts!

One of the mainstays of my blog will be my beloved InstantPot. When I was first gifted my InstantPot, I didn’t understand its full potential. Now it is my go-to. Never will I ever buy canned beans again, nor would I ever want to (as you will see, I love my beans). Any time I make a grain it is also chucked into the InstantPot. A lot of my recipes will feature the InstantPot, however, I will do my best to provide a non InstantPot alternative.

Lastly, an important part of cooking in my opinion is a well stocked spice cabinet. I cook extensively with many different types of chili powders as well as spice seeds that have not been ground. If you don’t own all the spices in a recipe, I would highly recommend getting them all and not skipping as they will be used eventually.
